Comes out whole with a crisp pattern: cast aluminium spreads the heat and the double non-stick coating releases it.

Grease it with soft butter, not melted. This is the single most important thing: soft butter clings to the wall and reaches every crevice. Melted butter slides off, pools at the bottom and leaves the relief bare.
Then dust with flour, especially over the relief. The non-stick coating helps, but on a patterned tin this is what makes sure the cake comes out whole.
Fill it two-thirds at most: the batter rises. Let it cool 10 to 15 minutes before turning it out; hot it breaks, cold it sticks.
Oven safe. Not for induction, direct flame or the dishwasher.
Warm water, mild soap and a cloth. No scouring pads and no powders: they scratch the non-stick layer, and that's where the sticking starts.
No dishwasher either. Tablet detergent is harsh and wrecks the coating in a handful of cycles. It's the one rule that really matters.
Don't cut the cake inside the tin and don't use metal utensils against the surface.

Water-based. The cake comes away by itself: half the ring does not stay stuck in the tin and you do not lose the pattern when you turn it out.
It is heavy because it is solid. It spreads the heat evenly and lasts years in the oven without bulging or losing its shape, which is what happens to thin aluminium tins.
The central hole lets heat through the middle, so the batter bakes from both sides at once. Less oven time and no raw centre.
The coating is water-based: free of PFOS, PFOA, lead, cadmium, arsenic and mercury. What touches your cake adds nothing to it.
Warm water, mild soap, done. No scouring pad and no dishwasher: that's the one rule, and it's what keeps the non-stick working five years from now.
Why cast aluminium
All three make cakes. The difference is in how they spread the heat, whether they hold their shape and how many years they last you.
| What we compare | ErrekeCast aluminium | Silicone tinSoft and flexible | Pressed metal tinThin steel |
|---|---|---|---|
| How it spreads the heat | ✓Thick walls: rises evenly in the centre and at the edge | Silicone insulates: the cake browns less | Heats up very fast: the edges can overcook |
| The shape | ✓Rigid: the pattern comes out sharp | ✕Loses its shape when full; needs a tray underneath | Can dent if knocked |
| Turning out | ✓Double non-stick coating: grease, flour and it comes out clean | ✓You turn it inside out and it comes out | Depends on the coating, which wears off |
| Coating | ✓No PFOS, no PFOA | Depends on the brand | Depends on the brand |
| Cleaning | By hand, with warm water and soap | ✓Usually goes in the dishwasher | Depends on the brand |
