Wash it by hand with warm water and mild soap, and dry it standing up. Do not put it in the dishwasher or leave it to soak: a block this thick takes a long time to dry on the inside.
Every two or three months, a thin coat of food-grade mineral oil. On a vertical grain block, this is what keeps the wood nourished and stable when the humidity changes.
